
White balsamic is a wonderful, light colored vinegar made from Albana, Trebbiano and Montuni grape musts (grown exclusively in Modena, Italy). This blend creates a rich and full bodied product that could not be achieved with Trebbiano grapes alone. After being hand-picked, the grapes are left to dry in the sun for 10 to 15 days. During this period the natural sugar, flavor, and body of the grape is enhanced. This proprietary drying period results in an approximate volume loss of 10% through evaporation. It’s aged in new white oak barrels to mature upwards of 12 years.
This product is desirable and was created for its characteristic white color to aid chefs in creating beautiful dishes without discoloring their work. White balsamic is typically a bit more sharp and bright in flavor than its dark counterpart.
