Sweet Potato & Chocolate Chunk Muffins

You can make this recipe totally vegan by using an egg replacement and a dairy free chocolate.
Our vegan Butter olive oil is a good start!

Sweet Potato Muffins


  • 1-1/2 C spelt flour (or whole wheat flour)
  • 1-1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 3 eggs, room temp
  • 1/2 C sugar (you can use coconut sugar)
  • 3/4 C POUR OLIVE Butter Olive oil
  • 2 medium sweet potatoes, baked and mashed
  • 5 oz chocolate chunks or chips


  1. Sift first 5 dry ingredients into a bowl.
  2. In a separate larger bowl, whisk together eggs, oil, and sugar. Then mix in sweet potatoes.
  3. Stir dry ingredients into wet ingredients. Fold in chocolate bits. Do not over mix the batter.
  4. Divide into a lined muffin/cupcake pan and bake at 350* for 20-25 minutes (depending on the size of your muffins).

Serve warm or enjoy later!
