Pineapple Balsamic Salad

2 TBsp Pour Olive Ultra Premium olive oil

2 Boneless, skinless chicken breasts, sliced thinly

1/4 Vadalia onion, julienned

3 to 4 Cups fresh spinach

1 Cup fresh mozzarella, sliced thinly

Pineapple Dressing:

1 Cup pureed fresh pineapple (about 1/4 of a whole pineapple)

2 TBsp Pour Olive Pineapple Balsamic

2 - 3 TBsp honey (Cloister brand honey is perfect)

1/4 Cup Pour Olive Ultra Premium olive oil

Dash of salt

Dash of cayenne pepper (opt, adds a nice kick!)


  1. Place chunks of fresh pineapple in blender, blend to puree.
  2. Add the balsamic, honey, oil and blend till smooth again.
  3. Add salt and cayenne to taste.
  4. Place dressing in container and refrigerate till needed. Shake before use.
  5. Heat Pour Olive oil in a sautee pan over medium heat, add vadalia onion.
  6. Once the onion starts to soften a bit add the chicken, cook till done.
  7. Allow to cool slightly and toss with the spinach and mozzarella.
  8. Drizzle the chilled dressing on top and ENJOY!
