Strawberry Basil Balsamic Soda

2 simple home-made mixtures combine into sparkling bliss!

1 Pint Strawberries, greenery removed
1 Tablespoon Pour Olive Strawberry Balsamic Vinegar
1 Tablespoon Sugar
Pinch Of Salt
1 Cup Water, Divided
½ Cup Sugar
1 Cup Basil Leaves
Club Soda
Sliced Strawberries And Basil Leaves For Garnish


  1. Preheat oven to 400 degrees.
  2. Foil line a sheet pan. Toss strawberries, Pour Olive strawberry balsamic, sugar, and salt together. Spread out onto foil.
  3. Roast for 20 to 25 minutes, till the berries are caramelized. Puree with 1/2 cup water until smooth then strain the berry mixture and discard the solids. Reserve juice in a bowl.
  4. In a small pot, combine 1/2 cup water, 1/2 cup sugar, and basil leaves together. Bring to a boil then reduce heat and simmer for 5 mins, allowing the basil to flavor the simple syrup. Strain the syrup into a bowl and discard basil leaves.
  5. Once the basil simple syrup is cool, combine with the strawberry juice.  This mixture may be kept in a sealed container in the cooler for at least 1 to 2 weeks!

    (Once the syrup is complete it's easy sailing from here)

Spoon 2 TBsp of syrup into an 8oz glass. Fill with soda water. Adjust flavor by adding more syrup and garnish with fresh strawberries and       basil leaves.
