Strawberry Mint Bruschetta

  • 1 lb. fresh strawberries, finely chopped
  • 1 tsp. sugar
  • Handful of fresh mint, chopped
  • 1 Tbsp Pour Olive Strawberry Balsamic
  • Freshly ground black pepper
  • 1 crusty baguette, thinly sliced
  • 1 to 1-1/2 C quality whole milk Ricotta (opt)
  • 1 Tbsp Pour Olive UP extra virgin olive oil, for brushing
    + 1 Tbsp for drizzling (opt)


1. Preheat oven to 350 degrees.
2. Cut baguette on an angle into thin slices and brush with Pour Olive's EVOO and sprinkle with salt.
3. Arrange on baking sheet and bake for 10 mins, flipping half way through.
4. In a medium bowl, sprinkle strawberries with sugar and let sit for 15-20 mins.
5. Add mint and balsamic and some freshly ground black pepper.
6. Spread ricotta over toasted slices, drizzle with the extra olive oil, arrange strawberry mix on top.
