Tuscan Chicken Salad

stunning side dish that impresses

The baking times are approximate; it depends on how thick you cut the wedges or rounds of each veggie. Try to cut them evenly so they all cook at about the same rate.

Pour Olive's Tuscan Herb Infused Olive Oil
Pour Olive's 18 year aged balsamic
1 eggplant
1 red bell pepper
1 yellow squash
1 zucchini
1 onion
~4 oz goat cheese
1/2 loaf crusty bread (Duke's Rosemary Sea Salt works great)


1. Set grill to Medium-High
2. Cut all veggies and bread into 1 inch chunks
3. Toss with the Tuscan Herb oil and Aged Balsamic
4. Spread in a single layer fashion on a grill pan and cook about 15-20 minutes or until the bread starts to char slightly
5. Top with goat cheese and serve on a hot summer evening when the oven shouldn't be turned on!
