White Balsamic:

White balsamic is a wonderful, light colored vinegar made from Albana, Trebbiano and Montuni grape musts (grown exclusively in Modena, Italy). This blend creates a rich and full bodied product that could not be achieved with Trebbiano grapes alone. After being hand-picked, the grapes are left to dry in the sun for 10 to 15 days. During this period the natural sugar, flavor, and body of the grape is enhanced. This proprietary drying period results in an approximate volume loss of 10% through evaporation. It's aged in new white oak barrels to mature upwards of 12 years.
This product is desirable and was created for its characteristic white color to aid chefs in creating beautiful dishes without discoloring their work. White balsamic is typically a bit more sharp and bright in flavor than its dark counterpart.

Our Coconut balsamic is a delightful infusion of ultra premium white balsamic and creamy smooth coconut. It’s perfectly sweet, pleasingly tart and redolent with the clean, rich flavor of coconut. It makes a fantastic dressing or marinade, splash onto a fruit salad, or enjoy in a cocktail. 

Cascadian Raspberry:Juicy, tart raspberry and luscious white balsamic come together in this bright, versatile infused balsamic. Use it in shrubs, mixed cocktails (like this "mojito"), as a glaze or make a marinade for poultry. Drizzle over wilted spinach or freshly cut fruit. Use as a bright vinaigrette over greens, grilled chicken tossed with veggies & quinoa or couscous. Delicious to glaze your salmon! Cranberry Pear:
An absolute delight; clean, crisp and tart. The complex bouquet shines in a multitude of culinary applications. French Champagne Vinegar:
Imported directly from the Champagne region in France, our champagne white wine vinegar is unlike any other. Never undergoing a pasteurization process, the flavor is smooth and elegant. Create a flavorful vinaigrette with shallot, garlic and mustard then use over greens or potato salad. Braise pork or use in a marinade for grilled chicken. Combine with dried herbs for a simple pan sauce. Liven up your couscous by mixing with lemon juice. Add a splash wherever your meal needs it! Pair with any of our UP plain or flavored olive oils.

Our grapefruit white balsamic sparkles with crisp, clean citrus flavor. It has a perfect balance of acidity and natural sweetness. Try this amazing balsamic in dressings, paired with fennel. It makes a show-stopping white balsamic grapefruit granita. Delicious when drizzled on avocados. Great with Gremolata Oil or Herbs de Provence Oil.

Honey Laced Ginger: 
Honey and ginger in tandem bring gentle, spicy heat to perfectly balance this white balsamic. Drizzle over apple slices. Add a splash to your grilled chicken, shrimp, or tofu! Makes a wonderful salad dressing. Create an Asian inspired coleslaw. Superlative when paired with our Persian Lime olive oil or the amazing Toasted Sesame Oil. Try it in a drink or fresh spring rolls!

Lemongrass Mint:
First sweet and playfully tart then refreshing and relaxing mint sets in. Such a beautiful combination. Perfect for salads and mixed drinks alike (we're looking at you, Mojitos)! Dress up watermelon or cucumber salad. Use as a dip for fresh spring rolls or splash into Thai inspired soups. Matches well with Basil, Eureka Lemon, Persian Lime, Baklouti Green Chili, or Classic olive oil.

Playfully tart and pleasantly sweet, Sicilian Lemon offers a perfect balance of acidity woven with crisp lemon flavor and aroma. Fabulous with seafood, in dressings or try it in mixed drinks. Try this Caramelized Vegetable Croquettes with Gremolata Hollandaise recipe-for a bit more work, this is one AMAZING meal!

Traditional White Balsamic:
A premium unflavored white balsamic made from Trebbiano grape musts. It is traditionally cooked and aged in white oak barrels without caramelization, hence the bright and tart flavor! It's perfect drizzled over green beans with tomatoes, feta, and a delicious olive oil. Add at the end of your saute for a punch of flavor that brightens the dish and aids in creating a pan sauce. Make a wonder salad dressing, of course!
Pair with any Pour Olive Ultra Premium olive oils or Infused/Fused olive oils.

Blenheim Apricot:
Juicy, fragrant, sweet, slightly tart and simply mouthwatering! Tastes like summer in a bottle!
Use: Combine with whit wine and deglaze your pan for a wonderful pan sauce.  Serve as a finishing touch to wilted greens, veggies, and fish. 
Pair with: Gremolata, Rosemary, Garlic or Tuscan Herb Oil. 

Alfoos Mango:
Considered by many to be one of the best mangoes in terms of sweetness, richness, and flavor. It grows in India and is prized for its creamy floral notes and juicy sweet flesh. 
Use: Makes. Perfect summer salad with greens or fruit. Goes well with spicy creations like salsa, fish, coconut shrimp or chilies and grilled chicken. 
Pair with: Harissa, Chipotle, Persian Lime, Or Garlic Oil

Gravenstein Apple:
The Gravenstein apple is an incredibly hard-to-find varietal due to the difficulty farmers have in cultivating. It’s grown in pockets up the coast of N. California and prized for its amazing ambrosia perfume and crisp, sweet-tart cream colored flesh.
Use: Pairs well with Moroccan flavors like Harissa Oil and golden raisins over couscous. Try it drizzled on a variety of fruits or combine with cinnamon and a UP oil to finish off roasted butternut squash. Add a splash into your next cocktail. 
Pairs with: Garlic, Lime, Lemon, Tuscan Herb, Rosemary and Harissa oilive oils.
