White Balsamic:

White balsamics are a wonderful light colored vinegar made from Albana, Trebbiano and Montuni grape musts (grown exclusively in Modena, Italy). This blend creates a rich and full bodied product that could not be achieved with Trebbiano grapes alone. After being hand-picked, the grapes are left to dry in the sun for 10 to 15 days. During this period the natural sugar, flavor, and body of the grape is enhanced. This proprietary drying period results in an approximate volume loss of 10% through evaporation. It's aged in new white oak barrels to mature upwards of 12 years.
This product is desirable and was created for its characteristic white color to aid chefs in creating beautiful dishes without discoloring their work.

Juicy, fragrant, sweet, slightly tart and simply mouthwatering. Perfect for year round use! It's great for salads, marinades, and glazes. Drizzle over cous cous or mix into your yogurt. Add to chilled seltzer, sparkling water, or a gin & tonic. Apricot is light and floral so it compliments spicy dishes or sauces. Delicious with our Roasted Walnut Oil. An absolute delight; clean, crisp and tart. The complex bouquet shines in a multitude of culinary applications. French Champagne Vinegar:
Imported directly from the Champagne region in France, our champagne white wine vinegar is unlike any other. Never undergoing a pasteurization process, the flavor is smooth and elegant. Create a flavorful vinaigrette with shallot, garlic and mustard then use over greens or potato salad. Braise pork or use in a marinade for grilled chicken. Combine with dried herbs for a simple pan sauce. Liven up your couscous by mixing with lemon juice. Add a splash wherever your meal needs it! Pair with any of our UP plain or flavored olive oils.

Gravenstein Apple:
The Gravenstein apple is an incredibly hard to find varietal due to the difficulty farmers have cultivating it. In addition to contending with a very finicky tree, it's also not an apple that travels or stores well, so it's best enjoyed during its relatively short season and isn't typically shipped far. It's grown in pockets up the coast of N. California and prized for its amazing ambrosia perfume and crisp, sweet-tart cream colored flesh. Our Gravenstein Apple White Balsamic marries the complexity of the Gravenstein's larger than life flavor with our well balanced Ultra Premium White Balsamic Vinegar from Italy. Use it for dressing various salads or marinating chicken before the grill. Great with morrocan style flavors. Drizzle over various fruits or couscous. Mix with cinnamon and UP olive oil to roasted butternut squash.
