Roasted Beet Hummus

Ingredients:

1/2 C. Roasted Beets
1 chopped garlic clove
1 C. cooked white beans
2 T. lemon juice
3 T. POUR OLIVE' S ORGANIC MISSION EVOO
Course salt and pepper

Method:

1. Preheat the oven to 450°.
2. Place the beets in a “foil basket” with some Oranic Mission EVOO olive oil and PO's balsamic.
3. Wrap the foil around the beets and place in the oven for 45-60 minutes.
4. Remove from the oven, open the foil and allow the beets to cool 10-15 minutes.
5. Puree beets, garlic, beans, lemon juice, and olive oil.
6. Season with S + P. Serve with pita, fennel or make Romaine lettuce wraps!
