White Balsamic:


White balsamics are a wonderful light colored vinegar made from Albana, Trebbiano and Montuni grape musts (grown exclusively in Modena, Italy). This blend creates a rich and full bodied product that could not be achieved with Trebbiano grapes alone. After being hand-picked, the grapes are left to dry in the sun for 10 to 15 days. During this period the natural sugar, flavor, and body of the grape is enhanced. This proprietary drying period results in an approximate volume loss of 10% through evaporation. It's aged in new white oak barrels to mature upwards of 12 years.
This product is desirable and was created for its characteristic white color to aid chefs in creating beautiful dishes without discoloring their work.

Coconut:
Our wonderfully sweet and tart White Balsamic vinegar is infused with fantastic all natural coconut flakes. This light balsamic is truly unique. Great in your cocktails or paired with chilled seltzer. Drizzle over shrimp with Lime Oil or grilled chicken. Add a splash to your dressing for Thai inspired salads and dips or lemongrass curry soup.Paired with white fish and chilies, it's a winner!
Pairs well with Persian Lime Oil, Basil Oil, or Chipotle Oil for a little flare! Can you imagine this combined with chocolate? We sure can.

Cranberry Pear:
An absolute delight; clean, crisp and tart. The complex bouquet shines in a multitude of culinary applications. Dressing for fruit or vegetable salads, a glaze of poultry or with gelatin for delicious fruit aspic! Try this Cranberry Pear Roasted Butternut Squash recipe or Glazed Carrots for a stunning side!

French Champagne Vinegar:
Imported directly from the Champagne region in France, our champagne white wine vinegar is unlike any other. Never undergoing a pasteurization process, the flavor is smooth and elegant. Create a flavorful vinaigrette with shallot, garlic and mustard then use over greens or potato salad. Braise pork or use in a marinade for grilled chicken. Combine with dried herbs for a simple pan sauce. Liven up your couscous by mixing with lemon juice. Add a splash wherever your meal needs it! Pair with any of our UP plain or flavored olive oils.

Grapefruit:
Our grapefruit white balsamic sparkles with crisp, clean citrus flavor. It has a perfect balance of acidity and natural sweetness. Try this amazing balsamic in dressings, paired with fennel. It makes a show-stopping white balsamic grapefruit granita. Delicious when drizzled on avocados. Great with Gremolata Oil or Herbs de Provence Oil.

Honey Laced Ginger: 
Honey and ginger in tandem bring gentle, spicy heat to perfectly balance this white balsamic. Superlative when paired with our Persian Lime olive oil or the amazing Toasted Sesame Oil. Try it in a drink or fresh spring rolls!

Key Lime:
Our sweet and tart White Balsamic vinegar is infused with fantastic all natural Key Limes. A perfect blend for warm weather. Add a great twist to many dishes- a summer salsa or fruit salad. Toss into shrubs or sparkling water & make great cocktails. Wonderful as a glaze or addition to marinades and dressings. Use to glaze pork, poultry, seafood, veggies, and much more! Pair with Lime, Lemon, Orange, Garlic, Gremolata, Smoked, Chipotle, Harissa, Baklouti, or any UP olive oil. Try with Sesame oil as well!

Lemongrass Mint:
First sweet and playfully tart then refreshing and relaxing mint sets in. Such a beautiful combination. Perfect for salads and mixed drinks alike (we're looking at you, Mojitos)! Dress up watermelon or cucumber salad. Use as a dip for fresh spring rolls or splash into Thai inspired soups. Matches well with Basil oil or Eureka Lemon oil.

Passion Fruit:
A fresh mix of crisp white balsamic and sweet passion fruit collide in this natural pairing. Create a unique dish of chilled rice pudding with a splash of passion fruit. Toss with crunchy almonds & orange oil for a great arugula salad. Add it to an avocado based smoothie, in seltzer water or cocktails! Makes a great marinade or glaze with chicken or seafood (grilled or sautéed). Macerate other tropical fruits in this balsamic for a healthy dessert atop Greek yogurt. Pair with Lime, Lemon, Orange, Baklouti, or any UP olive oil.

Peach:
Made with white Trebbiano grape juice, this balsamic is not cooked or barrel-aged like other balsamics from Modena, Italy. This handcrafted crisp balsamic tastes more like summer peach juice than vinegar and boasts an intoxicating aroma. Perfect for lively salads, marinating meat for the grill, macerating fruits and using as a syrup in your drinks.Try it with our Tuscan Herb, Rosemary, or Basil olive oil for a sweet and herbaceous mixture or with our smokey Chipotle Oil, which is absolutely amazing!!

Sicilian Lemon:
Playfully tart and pleasantly sweet, Sicilian Lemon offers a perfect balance of acidity woven with crisp lemon flavor and aroma. Fabulous with seafood, in dressings or try it in mixed drinks. Try this Caramelized Vegetable Croquettes with Gremolata Hollandaise recipe-for a bit more work, this is one AMAZING meal!

Traditional White Balsamic:
A premium unflavored white balsamic made from Trebbiano grape musts. It is traditionally cooked and aged in white oak barrels without caramelization, hence the bright and tart flavor! It's perfect drizzled over green beans with tomatoes, feta, and a delicious olive oil. Add at the end of your saute for a punch of flavor that brightens the dish and aids in creating a pan sauce. Make a wonder salad dressing, of course!
